A Food Lover’s Guide to Corfu: 10 Dishes You Absolutely Must Try

Taste the true essence of the Emerald Isle, one unforgettable dish at a time.

Corfu’s cuisine is a delicious tapestry woven with Greek heart and Venetian flair, and there really is something for every taste! Ready to embark on a culinary journey you’ll never forget?

Let’s dive into the island’s most iconic flavours!

Corfu’s Unmissable Culinary Delights

Beyond the stunning beaches lies a world of rich, aromatic, and unique dishes. Here are our top 10 that you need to seek out in a traditional Corfiot taverna.

1. Pastitsada (Παστιτσάδα)

  • The undisputed king of Corfiot cuisine. This is a rich, aromatic dish of rooster or beef, slow-cooked in a spicy tomato sauce with a unique blend of spices called ‘spetseriko’ (cinnamon, clove, allspice).
  • Traditionally served with thick pasta, it’s the ultimate Sunday family meal and a true taste of Corfiot hospitality.

2. Sofrito (Σοφρίτο)

  • A dish with deep Venetian roots. Thinly sliced veal is pan-fried and then simmered in a fragrant white wine sauce loaded with garlic and parsley.
  • The result is incredibly tender meat with a zesty, addictive sauce, typically served with rice or mashed potatoes to soak it all up.

3. Bourdeto (Μπουρδέτο)

  • For lovers of spicy food! Bourdeto is a fiery fish stew made with firm-fleshed fish like scorpion fish or cod, cooked in a sharp sauce of hot red pepper and onions.
  • Unlike many Greek stews, it contains no tomatoes, giving it a uniquely intense and piquant flavour.

4. Bianco (Μπιάνκο)

  • The gentler, more subtle cousin of Bourdeto. This is a ‘white’ fish stew, where fish and potatoes are simmered with garlic, lemon juice, and black pepper.
  • It’s a simple, elegant dish that allows the fresh flavour of the fish to shine through.

5. Tsigareli (Τσιγαρέλι)

  • A must-try for vegetarians. Tsigareli is a flavourful dish of wild greens, slow-cooked with onion, garlic, tomato paste, and a generous kick of hot red pepper.
  • It’s a perfect example of how Corfiots turn simple, foraged ingredients into something truly delicious.

6. Nouboulo Foumikado (Νούμπουλο)

  • Often called the ‘Corfiot Prosciutto’. This is a cured pork loin, marinated in wine and spices, and then smoked with aromatic herbs like sage and bay leaves.
  • Served in paper-thin slices, it’s an exquisite appetiser, perfect with a glass of local wine and Corfiot cheese.

7. Grilled Octopus (Χταπόδι στα Κάρβουνα)

  • A classic Greek summer delicacy, perfected in Corfu’s seaside tavernas. The octopus is tenderised, marinated, and then grilled over charcoal until perfectly charred and smoky.
  • Served simply with a drizzle of olive oil and lemon, it’s the taste of the Ionian Sea on a plate.

8. Sikomaida (Συκομαΐδα)

  • A traditional ‘fig pie’ that is more of a dense, flavour-packed cake. Dried figs are kneaded with grape must, ouzo, and spices, then wrapped in fig leaves.
  • It’s a potent and delicious treat, perfect to enjoy with a strong Greek coffee or as a unique local souvenir.

9. Pastitso (Παστίτσιο)

  • While found all over Greece, Corfiot Pastitso is a comfort food masterpiece. It’s a baked pasta dish with layers of bucatini pasta, a rich meat ragu, and a thick, creamy béchamel sauce on top.
  • The Corfiot version often includes a hint of the same spices used in Pastitsada, giving it a distinct local twist.

10. Gingerbeer (Tsitsibira – Τσιτσιμπύρα)

  • Not a dish, but a must-try local drink! A legacy of British rule, this is a naturally fermented gingerbeer made with fresh lemon juice, ginger, sugar, and water.
  • It’s incredibly refreshing, cloudy, and has a fiery kick of real ginger. You can only find it in Corfu!

Bonus Tip: Finish with a Kumquat Liqueur!

No culinary tour of Corfu is complete without sampling its signature Kumquat liqueur. This sweet, fragrant orange spirit is the perfect digestif after a hearty meal. Many tavernas will offer you a shot on the house!
